Mango is the national fruit of India and it is from this sub-continent that it has spread all over the world. A great variety of sweet tasting and aromatic mangoes are grown in India. There are some that are considered well suited for pickling. For countless generations unripe mangoes have been used in India as a souring agent and dried unripe mango powder is an essential ingredient in many delicacies.
Our Mango pickle is prepared according to various ‘local’ recipes and over time a ‘classic’ rendering has emerged. Chopped pieces of mango are pickled in mustard oil their natural tang accented by myriad spices ground and whole.
