Pickling is the millennia old process of preserving food items to ensure their availability out of season. Pickles are made in times of plenty and enjoyed in scarcity. As accompaniment the pickles add flavor, color and texture to the plate and tickle the palate.
Chillies, we are told, have traveled from South America to India. Few recall that the Portuguese brought these with them. Today, the Chillies are associated with Indian Cuisine. Though consumption of this hot spice varies from region to region, their popularity in pickled form is undisputed. Both the green and red varieties are used.
